Wisdom for Your Wednesday



it's funny, i always imagined when i was a kid that adults had some kind of inner toolbox full of shiny tools: the saw of discernment, the hammer of wisdom, the sandpaper of patience. but then when i grew up i found that life handed you these rusty bent old tools - friendships, prayer, conscience, honesty - and said 'do the best you can with these, they will have to do'. and mostly, against all odds, they do.

A New Twist on an Old Classic

I am certainly a sandwich girl.  To me, they really make the perfect meal.  I don't think there's a sandwich I've met that I didn't like.  However, in my book nothing beats a BLT.  Especially when you can use some of your home grown goodness on it.  Right now it is prime tomato season, and I took advantage with this beauty: 


Ingredients:
Focaccia bread lightly warmed in the toaster.  This beauty was an herbed focaccia with rosemary and oregano- yum
A light smear of Mayo, just enough to keep the bread moist.
A couple leaves of baby spinach.  Now some may argue that you should use an iceberg or a leaf lettuce for this, but I believe that the spinach provides a stronger flavor that holds up with the bread, besides I had spinach so I used spinach.
Bacon- without it, it would just be an 'LT'.  While that is certainly ok, we're going for the whole shebang here! 
Slices of tomatoes picked right from the garden.  If you've never grown a tomato, you need to.  Hands down, nothing beats the flavors of a tomato you've grown yourself.  I especially like them straight from the yard when they are still warm.  Mmmmmm...
