I have a confession to make. I have never eaten grilled corn on the cob before. I am now a convert, I don't think I'll eat it any other way!
Mexican Grilled Corn with Cilantro
Ingredients...
2 ears corn1 tablespoon extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup chopped cilantro
1 teaspoon fresh lime juice
Directions...
Shuck the ears of cornToss corn in olive oil, salt, and pepper in a medium sized bowl (reserve the bowl).
Grill over medium heat for 10-12 minutes until the kernels are tender.
Place cilantro, lime juice, and warm corn cobs in the reserved bowl and toss.
Garnish with fresh lime wedges.
